Simit (The Turkish Bagel)

If you see an iconic red glass cart parked near the beach or along the main shopping avenue, head straight for it. Simit is a circular, molasses-dipped bread completely encrusted in toasted sesame seeds. It has a perfect crunchy exterior with a beautifully dense, chewy center.

How to eat it: Locals love it plain as a mid-morning snack, but you can ask the vendor to slice it open and slather it with karper (creamy processed cheese) or Nutella. Pair it with a small glass of hot Turkish tea (çay).

Gözleme (Savory Stuffed Flatbread)

Often made right in front of you by local women rolling out fresh dough on a senit (wooden circular board), gözleme is the ultimate comfort food. The dough is rolled paper-thin, stuffed with your choice of fillings, folded over, and cooked on a large, dome-shaped iron griddle called a sac.

Peer Tip: As soon as it comes off the griddle, the cook will brush it generously with melted butter. Eat it piping hot with a cup of cold, salted ayran (a refreshing yogurt drink) to perfectly balance the richness.

Heavy Hitters & Late-Night Cravings

Döner Dürüm (The Classic Wrap)

You can't talk about Turkish street food without mentioning döner. Massive vertical spits of seasoned chicken, beef, or lamb slowly rotate next to an open flame. Shaved off in thin, crispy ribbons, the meat is wrapped tightly inside a warm, thin flatbread called lavash.

The Kumköy Twist: Unlike Westernized versions that smother the meat in garlic mayo, an authentic street dürüm keeps it focused: just juicy meat, tomatoes, thinly sliced onions tossed in sumac, and fresh parsley. Some vendors will swipe the lavash against the rotating meat meat to absorb all those delicious, seasoned juices before rolling it up.

Kumpir (The Ultimate Loaded Potato)

If you have a massive appetite, look for the brightly lit neon Kumpir signs. Vendors take an enormous potato, bake it in a special industrial oven, slice it down the middle, and vigorously mash the fluffy interior with a generous helping of butter and salty kaşar cheese right inside its own skin until it reaches a velvety, elastic consistency.

The Toppings Bar: Once the base is creamy, you point and choose your toppings from a massive salad bar. Mix and match sweetcorn, pickled red cabbage, black and green olives, diced sausage (sucuk), Russian salad (mayo-based potato and pea salad), jalapenos, and finish it off with a drizzle of ketchup and mayo.

Coastal & Adventurous Bites

Midye Dolma (Stuffed Mussels)

A coastal town staple, midye dolma consists of plump orange mussels on the half-shell, stuffed with heavily aromatic rice that has been cooked with warm spices like allspice, cinnamon, black pepper, and sometimes pine nuts or currants.

How to eat them: You don't need a fork. The vendor will break off the top shell for you to use as a makeshift spoon. Squeeze fresh lemon juice over the spiced rice, scoop it out, and slide it down in one bite.

Peer Tip: These are incredibly addictive, and the vendor will just keep opening them for you as you stand by the cart. Keep track of how many shells you pile up, as you pay per piece!

Historically made with spiced raw meat, the commercial street version sold throughout Kumköy today is entirely vegan by law, making it a fantastic plant-based option. It is a highly seasoned, spicy paste made from fine bulgur wheat, tomato and pepper pastes, grated onions, and a complex blend of isot (smoky Turkish chili flakes) and pomegranate molasses.

How to order: Ask for a çiğ köfte dürüm. The vendor will smear the spicy paste onto a piece of lavash bread, pack it with crisp iceberg lettuce, fresh mint, arugula, fresh squeezed lemon, and a generous drizzle of tart pomegranate syrup (nar ekşisi). It’s crunchy, spicy, sweet, and sour all at once.

If you see locals and resort workers lining up at a cart, that is your guarantee that the ingredients are rotating quickly and completely fresh. Cash (Turkish Lira) is king at these smaller stalls, so keep a handful of coins and small notes handy!
